You hide, he hunts
Slip a handful of kibble or a few treats between the felt strips, put the mat on the floor and let him work. The first few times, hide them near the surface so he gets the idea; after that you can bury them deeper and deeper.

Does it really work, or is it a gimmick?
Hunting for food by scent is something a dog would do naturally outdoors. It focuses him and tires him mentally, which is why he's much calmer afterwards. It's not a substitute for a walk, but it's a real complement on days you can't go out for long.
